Crispy Chocolate Peanut Butter Bars

by tinareale on March 20, 2012

In case you haven’t figured it out already, I’m a busy lady. With kids. Two kids. Two hungry kids. And one hungry mama. That means we love to eat and often need a quick option.

Something that has at least some nutritional value. Something that tastes good. Something that kids will want to eat. Something that we can grab and eat quickly on one of our many hurried mornings or afternoons.

Enter Crispy Chocolate Peanut Butter Bars.

That’s a mouthful. A mouthful you will want to take. I promise you they are good. They have chocolate. They have peanut butter. They are like a little treat, but still reasonable enough to hand off to the kids for a quick snack on occasion. And made with almost all natural ingredients because, as Attune Foods states, “What matters most is what’s inside”.

Amen, Attune. Amen. And thank you for making that easier with so many great products! We love you in the Reale household – from your New Morning graham crackers to your Uncle Sam Strawberry Fields cereal to your chocolate probiotic bars. We’re big fans!

But back to the peanut butter. And chocolate. And CHOCOLATE CRISPY RICE CEREAL!

Flashback to childhood! Oh, don’t you miss the Cocoa Crispies eating days? Well wish no more. Pour yourself a bowl while whipping up a batch of these bars. You won’t be sorry.

Crispy Chocolate Peanut Butter Bars

Prep Time: 15 minutes
Cook Time: ZERO! (no-bake bars!)
Chill Time: at least 2 hours
Servings: 12

  • 1 1/2 cups Erewhon Cocoa Crispy Brown Rice Cereal from Attune Foods
  • 1 cup rolled oats
  • 1/2 cup honey
  • 1/2 cup natural creamy peanut butter
  • 1 teaspoon vanilla
  • 1/4 cup semi-sweet chocolate chips
  • 1/3  cup chopped peanuts
  • 1/4 cup other optional mix-ins of choice like dried fruit or shredded coconut

Spray an 8×8 dish lightly with cooking spray or line with waxed paper.

Mix the brown rice cereal and rolled oats together in a large bowl. Melt the honey and peanut butter together over low heat in a small saucepan. When the peanut butter and honey are a smooth consistency, stir in the vanilla. Pour the honey/peanut butter mixture over the oats/cereal mix. Combine well. Add in the chocolate chips, chopped peanuts, and/or other mix-ins of choice. Stir until evenly combined. Pour into the 8×8 dish and press down firmly. Chill in refrigerator until set – at least 2 hours. Cut into 12 bars. Wrap up individually and store for a delicious and fast snack or a light dessert option!

Your Turn…

What is a throwback to childhood food you still like to enjoy? Ever tried anything from Attune?

11 Kierston March 20, 2012 at 7:35 am

That looks delish! Plus, I’m a PB LOVER! Favorite childhood treat: Rice Krispies Squares and Fruit Roll-ups! I’ve never tried Attune products but it sure looks good!

12 Sarena (The Non-Dairy Queen) March 20, 2012 at 7:39 am

15 Jamie @ Don't Forget the Cinnamon March 20, 2012 at 8:09 am

Wow these look great and I LOVE that they are no bake!
The cocoa krispie look alikes are bringing me back to high school ap physics–my teacher would bring in cocoa krispies and milk for us at every exam! Despite the fact that there were only 6 of us in the class, we usually finished off the entire box!

16 tinareale March 20, 2012 at 9:07 pm

I wish I had a teacher like that!Haha!

17 Heather (Where's the Beach) March 20, 2012 at 8:14 am

19 Cheryl @ Happy is the new healthy March 20, 2012 at 8:17 am

Those look good! And sound pretty close to the recipe I played around with last week and have been enjoying ever since! I’ll give yours a go next :)

20 Janice- The Fitness Cheerleader March 20, 2012 at 8:22 am

I’ve never seen Attune foods in Canada :( What else could replace the cereal in this recipe?

21 tinareale March 20, 2012 at 9:08 pm

Any crispy rice cereal would work. Otherwise, I guess you could do more oats…but they wouldn’t have the crispy texture.

22 Tiff @ Love Sweat and Beers March 20, 2012 at 8:28 am

Yum! Those looks great. I still enjoy Pop Tarts. I know I shouldn’t, but about once every 6 months I give into the temptation. Who knew comfort food could come from a vending machine?

23 tinareale March 20, 2012 at 9:09 pm

PopTarts are a childhood fave of mine too. I can’t remember the last time I had them though!

24 Laura @ Sprint 2 the Table March 20, 2012 at 8:39 am

I used to LOVE cocoa krispies! You can never go wrong with chocolate and peanut butter… can you bring these to the next meet up? ;)

25 tinareale March 20, 2012 at 9:09 pm

Remind me and I will. They’re easy enough! ;)

26 Maryea @ Happy Healthy Mama March 20, 2012 at 8:39 am

Oh these look like a perfect treat for my chocolate-loving girl! Yum.

27 Jana @ Newly Wife Healthy Life March 20, 2012 at 8:56 am

31 Lindsay @ In Sweetness and In Health March 20, 2012 at 9:07 am

Um…can I come over and eat them? haha…those look amazing!!

32 Katie @ Peace Love & Oats March 20, 2012 at 9:40 am

I haven’t tried their cereal yet, but I keep meaning to since it’s gluten free! I’ve been craving some normal cereal lately, maybe I’ll find a good gluten free kind to satisfy the craving! Lol all I want are some cheerios…

33 tinareale March 20, 2012 at 9:10 pm

I don’t even have to avoid gluten and LOVE their cereals. So I think that speaks for something. Haha!

34 Lauren @ Oatmeal after Spinning March 20, 2012 at 9:51 am

Wow- these look store bought- and I mean that in the best possible way! I have all kinds of ideas for variations on rice crispies treats, but never actually make them (because that would require effort…). But my favorite “childhood” food is definitely PB+J.

35 tinareale March 20, 2012 at 9:11 pm

Shhhh…don’t give away my secret. ;) haha!

36 Parita @ myinnershakti March 20, 2012 at 9:55 am

I still love Rice Crispies Treats (every now and then)…the homemade kind of course! There’s nothing like marshmellowy goodness to take you back in time. :)

37 Carol @ Lucky Zucca March 20, 2012 at 10:29 am

Yum!! Those look awesome!!! I also love the fact that they’re no-bake.

38 Ashley @ My Food 'N' Fitness Diaries March 20, 2012 at 10:30 am

39 Cat @ Breakfast to Bed March 20, 2012 at 10:42 am

41 tinareale March 20, 2012 at 9:12 pm

I find them at most of my local grocers (Kroger and Publix) and have also seen them at places like Trader Joes and Whole Foods.

42 Bianca @ Confessions of a Chocoholic March 20, 2012 at 11:06 am

44 Heather @ girlyeverafter March 20, 2012 at 11:22 am

I used to eat Kudos bars all the time as a kid and these remind me of those but way better;) I’ve had Attune foods and prefer it to Kashi but can’t always find it. Thanks for the recipe!

45 Megan March 20, 2012 at 12:05 pm

Do you happen to have nutrition info on these bars? I can’t wait to make them!

46 tinareale March 20, 2012 at 9:22 pm

I just calculated it. They have about 200 calories with 10 grams of fat (healthy, unsaturated kind mostly), 7 grams of protein, 20 grams of carbohydrate.

47 Lisa March 20, 2012 at 12:13 pm

Yum! I love that they are no bake, easier for me :)

48 Kelly March 20, 2012 at 12:13 pm

YUM! I want to be a kid in your house!!

I just want you to be in my house so we can hang out!

50 Paige @ Running Around Normal March 20, 2012 at 12:24 pm

These sound amazing, Tina!! I have some of their regular brown rice crispies, so I bet I can tweak it a bit and add my own cocoa…

51 Megan @ Fiterature March 20, 2012 at 12:33 pm

Those look great – what a perfect grab and snack for you and the kiddos.

My favorite throw back treat is Captain Crunch!

52 Heather @ Better With Veggies March 20, 2012 at 12:36 pm

Yum! Tina these look great and good timing for our snowboarding trip next week. These sound like great treats to make and pack in our pockets for a snack while we ride. :)

56 misszippy March 20, 2012 at 2:29 pm

What a great recipe! I KNOW my kids would love these–actually, they’d love helping to make them too.

Thanks for sharing!

57 Anna @ On Anna's Plate March 20, 2012 at 2:37 pm

Haha…my mom never let us have sugary cereals like Cocoa Rice Krispies, no matter how much I begged! So these wouldn’t exactly be *nostalgic* for me…but they look delicious nonetheless!!

58 Judit - Corina @WineDineDaily March 20, 2012 at 2:50 pm

Thanks for the great recipe! These look so good and love that they are NO bake…

59 Kathy March 20, 2012 at 2:55 pm

The second I saw the words “Chocolate Peanut Butter” in the title my mouth began to drool!! When I saw the pictures I though I was in heaven. These look and sounds amazing, not to mention easy to make! I’m an addict for chocolate peanut butter combinations…my diet freshman year of college revolved around reeses. Its great to know that I can enjoy that taste in a healthy and homemade way. Thanks so much for sharing.

64 Samantha March 21, 2012 at 4:29 pm
