In case you haven’t figured it out already, I’m a busy lady. With kids. Two kids. Two hungry kids. And one hungry mama. That means we love to eat and often need a quick option.
Something that has at least some nutritional value. Something that tastes good. Something that kids will want to eat. Something that we can grab and eat quickly on one of our many hurried mornings or afternoons.
Enter Crispy Chocolate Peanut Butter Bars.
That’s a mouthful. A mouthful you will want to take. I promise you they are good. They have chocolate. They have peanut butter. They are like a little treat, but still reasonable enough to hand off to the kids for a quick snack on occasion. And made with almost all natural ingredients because, as Attune Foods states, “What matters most is what’s inside”.
Amen, Attune. Amen. And thank you for making that easier with so many great products! We love you in the Reale household – from your New Morning graham crackers to your Uncle Sam Strawberry Fields cereal to your chocolate probiotic bars. We’re big fans!
But back to the peanut butter. And chocolate. And CHOCOLATE CRISPY RICE CEREAL!
Flashback to childhood! Oh, don’t you miss the Cocoa Crispies eating days? Well wish no more. Pour yourself a bowl while whipping up a batch of these bars. You won’t be sorry.
Crispy Chocolate Peanut Butter Bars
Prep Time: 15 minutes
Cook Time: ZERO! (no-bake bars!)
Chill Time: at least 2 hours
Servings: 12
Ingredients
- 1 1/2 cups Erewhon Cocoa Crispy Brown Rice Cereal from Attune Foods
- 1 cup rolled oats
- 1/2 cup honey
- 1/2 cup natural creamy peanut butter
- 1 teaspoon vanilla
- 1/4 cup semi-sweet chocolate chips
- 1/3 cup chopped peanuts
- 1/4 cup other optional mix-ins of choice like dried fruit or shredded coconut
Spray an 8×8 dish lightly with cooking spray or line with waxed paper.
Mix the brown rice cereal and rolled oats together in a large bowl. Melt the honey and peanut butter together over low heat in a small saucepan. When the peanut butter and honey are a smooth consistency, stir in the vanilla. Pour the honey/peanut butter mixture over the oats/cereal mix. Combine well. Add in the chocolate chips, chopped peanuts, and/or other mix-ins of choice. Stir until evenly combined. Pour into the 8×8 dish and press down firmly. Chill in refrigerator until set – at least 2 hours. Cut into 12 bars. Wrap up individually and store for a delicious and fast snack or a light dessert option!

I love Attune cereals!! The crisp brown rice cereal is great, would love to try the chocolate version. And those bars look fantastic.

Oh wow those look delicious…your kids sure are likely to have a mom like u! These remind me of Rice Krispie Treats that I used to eat as a kid…soo yummy! Trans fat or not, I think I would still happily eat them occasionally

The cocoa krispie look alikes are bringing me back to high school ap physics–my teacher would bring in cocoa krispies and milk for us at every exam! Despite the fact that there were only 6 of us in the class, we usually finished off the entire box!

Any crispy rice cereal would work. Otherwise, I guess you could do more oats…but they wouldn’t have the crispy texture.
Yum! Those looks great. I still enjoy Pop Tarts. I know I shouldn’t, but about once every 6 months I give into the temptation. Who knew comfort food could come from a vending machine?
PopTarts are a childhood fave of mine too. I can’t remember the last time I had them though!

I haven’t tried their cereal yet, but I keep meaning to since it’s gluten free! I’ve been craving some normal cereal lately, maybe I’ll find a good gluten free kind to satisfy the craving! Lol all I want are some cheerios…
I don’t even have to avoid gluten and LOVE their cereals. So I think that speaks for something. Haha!
Wow- these look store bought- and I mean that in the best possible way! I have all kinds of ideas for variations on rice crispies treats, but never actually make them (because that would require effort…). But my favorite “childhood” food is definitely PB+J.

I find them at most of my local grocers (Kroger and Publix) and have also seen them at places like Trader Joes and Whole Foods.

I used to eat Kudos bars all the time as a kid and these remind me of those but way better;) I’ve had Attune foods and prefer it to Kashi but can’t always find it. Thanks for the recipe!

I just calculated it. They have about 200 calories with 10 grams of fat (healthy, unsaturated kind mostly), 7 grams of protein, 20 grams of carbohydrate.

Haha…my mom never let us have sugary cereals like Cocoa Rice Krispies, no matter how much I begged! So these wouldn’t exactly be *nostalgic* for me…but they look delicious nonetheless!!

The second I saw the words “Chocolate Peanut Butter” in the title my mouth began to drool!! When I saw the pictures I though I was in heaven. These look and sounds amazing, not to mention easy to make! I’m an addict for chocolate peanut butter combinations…my diet freshman year of college revolved around reeses. Its great to know that I can enjoy that taste in a healthy and homemade way. Thanks so much for sharing.
