Since I seem to be in a sharing from a personal perspective mood, I figured what better time than to bring back an old favorite type of post. What I Ate Wednesday!

For those of you unaware of What I Ate Wednesday, it’s a link up for bloggers to participate in where we all share our daily meals to provide inspiration and ideas for others on a healthy living journey. I used to participate in What I Ate Wednesday quite often, but then I got into more of the fitness blogging side of things. What can I say? I love to “talk shop”. I still eat, though. And I still focus on eating a healthy, balanced diet on a daily basis. I regularly share my workouts with you in my Move It Monday posts, but this week I want to share my regular daily eats with you too.
I tend to stick to the same basic meals and components on a regular basis, so what you see here will give you a good glimpse into what I regularly eat on any given day. I mix it up, of course, but this will provide a very realistic look at my meals. I don’t count calories or track my macronutrients, although I do think those habits can be beneficial in many cases. I simply strive to get balance in my meals and choose as wholesome and natural foods as possible, with some little splurges here and there.
Breakfast – 1/2 cup oatmeal + 1/2 cup mixed berries + 1-2 tablespoons natural peanut butter
(Post Workout )Snack – Green Smoothie made with 1 cup unsweetened vanilla Almond Breeze, 1 frozen banana, 2 tablespoons peanut flour, 2-3 handfuls fresh spinach, 1/2 scoop protein powder (and coffee! gotta have the coffee before play time with the kiddos!)
Lunch – sweet potato with Cinnamon Laughing Cow wedge, hummus + carrots, 1 egg
Snack – Chobani Greek Yogurt (plain w/ NuNaturals drops added) and Clif Kids Z Bar
Dinner – salad with mixed greens, tomatoes, cucumbers, chickpeas, dried cranberries, pecans, and balsamic dressing

Dessert – serving of frozen yogurt (mmmm Mocha!)
As I always say, I don’t strive for perfection in my meals but I do strive for overall balance and as healthful choices as possible. It takes the stress off and it works great for me!

The best thing I ate lately is pretty boring, but spectacular to me because I am learning to let go of stringent eating. Basically it’s overnight oats with unsweetened vanilla almond milk, chia seeds, greek yogurt, diced apple and banana, spoonful of syrup, cinnamon, a big spoonful of peanut butter and sprinkled with graham cracker crumbs, sliced almonds and crumbled up Cookie Crisp cereal! So yummy and perfectly filling until lunch.
That does sound SO good!
I had ice cream last night too…and the night before.
ok fine. I eat ice cream every day.
Ice cream or chocolate every day. I keep it to a small serving and it makes me happy.
We are huge ice cream family! My husband gave me an ice cream maker in June and we have put it to work! Cranking out all kinds of yummy flavors this summer. It’s my daily indulgence too. And soooo worth it!
I had gone almost a month without ice cream, but busted it out the last two nights and can’t say I regret it

I made these pretty awesome loaded potato skin chip things that were probably the best thing I’ve ever randomly made (non-baked good best thing anyway). Thank you pinterest for random food ideas! It had bacon and cheese so my Husband loved it too ;P
we made man cupcakes for our small group last week (beer in the cake, whiskey frosting, topped with bacon, peanuts, chocolate chips) and let me just say that the leftovers are veeeery tempting

How do you cook your oats? Just water or do you use milk or something? They look delicious!!
I have been digging my lunch time salads. Our garden is overflowing with fresh veggies, so its a perfect time to eat giant salads everyday. I try to get creative with my toppings so I don’t get bored, and it has really hit the spot lately! Leftover corn on the cob? Sure! Cucumber and onion salad? Toss ‘em in! The more the merrier I say!
I do 1/2 cup oats and cover them with water (ends up about 3/4 cup water I believe). Then I microwave them at 50% power for about 4 minutes. The 50% power should keep them from exploding but I still keep an eye on them.
Once the water is soaked up from the cooking, I take them out and add some unsweetened vanilla almond milk until I get the consistency I like. That’s when I add any toppings and NuNaturals vanilla stevia drops to give a hint of sweetness.
I didn’t know Laughing Cow has a cinnamon flavour! That sounds amazing!
The best thing I’ve eaten in the past few days was my meal at Buca, an authentic Italian restaurant in Toronto. I split a cheese plate with my family to start and for my main meal I had a pizza with burrata, truffles and basil. It was sooo good!
They now have a full line of light cream cheese wedges – cinnamon, regular, strawberry, and garden veggie. They are tasty!
We have really similar eating habits! I love a small lunch so I can have some yummy afternoon snacks.
I could really go for some frozen yogurt, yum!
i love how well rounded your meals are! i’ve been loving ice cream lately for my evening snack/dessert. i could never get sick of ice cream!

hmmm…best thing i’ve eaten lately? i had this great pulled pork blackberry spinach salad when i was in california recently…so fresh and delicious!

Where did you find the Cinnamon Laughing Cow? I can’t find it anywhere
I actually found it at Wal Mart of all places! Whenever I have to run an errand there for soemthing cheap I grab a few to save them since they aren’t ever at Kroger where we do our groceries.
I’ll have to check Walmart again. The last few times I went there I haven’t seen it but it doesn’t mean they don’t have it now. Or maybe Savannah is a little behind the times. haha!
I forgot to buy hummus this week so I made my own. Let’s just say I’ll never buy it again it was that good! Plus, you can have more as it’s much better for you too

Love banana soft serve! But I’m such a sucker for the smoothie I always end up using my banana there.
Oh goodness, your sweet potato, laughing cow cheese, egg meal looks so good! I want to recreate! Actually all your food looks delicious!! Hm, best thing I ate was probably protein muffin, love those things!

We took a packing break last night and went to Root Down in Denver – had an amazing Bourbon BBQ Tofu. Not sure it was the healthiest choice, but it was really good!

The best thing I ate today was protein pancakes topped with 2 tbsp. coconut butter. AMAZING!
They have a line of cream cheese flavors now! Cinnamon, strawberry, veggie, and plain. You should try them. I am in love with the cinnamon one.

My boss and I went to the Flying Biscuit today. While my lunch was good (Tofu scramble), the best part was obviously the biscuit. They are so good!

I LOOOOOOVE the peanut flour in my green smoothie. Makes it a little creamier in my opinion.
