We are HUGE fans of dark chocolate especially chocolate and mint together, anyone else? What is your favorite chocolate flavor combo? Today’s recipe was inspired by our coconut protein fit macaroons and since we love chocolate we thought of making a chocolate version. This simple recipe can be made with any protein powder of your liking. And do not worry if you do not have protein powder or not a fan of it, feel free to add in either more coconut flakes or almond meal. Another great thing about this recipe is that it is unbaked (raw), which makes it super easy to make since you don’t have to wait for it to bake. These are more soft and chewy kind of macaroons. If you have made raw vegan macaroons before then you know what we mean. Promise they are deliciously addictive! Okay lets get started making these chocolate macaroons shall we.
First you need some chocolate for the outside coating to dip your chocolate macaroons in. We like really dark chocolate, but any kind of chocolate would do. We melted our chocolate using a double boiling method. Place pieces of chocolate into a large bowl, grab a second bowl fill with very hot water. Take your bowl filled with chocolate and place it on the bowl with the hot water. It will slowly start to melt the chocolate from the heat from hot water.
As the chocolate is melting you can start making the chocolate protein macaroons. Place all dry ingredients into a bowl and stir till combined. Next add in your liquid sweetener, we used coconut nectar. Note the batter is sticky. Your hands will get a little messy. Once batter is ready you can spoon out your macaroons into any shape you would like. We used a tablespoon to scoop ours and got 10 bite-size macaroons. Place them on a plate to set in fridge for about 5 minutes. Setting them in the fridge just makes them easier to work with when dipping into melted chocolate.
Now for the fun part. Once your macaroons have set for a little bit and chocolate is melted you can start to dip the macaroons into the chocolate. We like our chocolate so after dipping all 10 bite-size macaroons there was still melted chocolate leftover, so we decided to re-dip the macaroons one more time. Doubled chocolate dipped? Yep! Told you we love our chocolate. Again we let the first chocolate coating set for a little bit before dipping again. Place your doubled chocolate dipped macaroons back into refrigerator or freezer to set. - 1/2 cup coconut flakes
- 3 tablespoons cocoa powder
- 2 tablespoons protein powder (we used brown rice protein powder) or you could use more coconut flakes or almond meal
- 3/4 teaspoon cinnamon (could flavor it anyway you like)
- 1 tablespoon coconut oil, liquid
- 2 tablespoons maple syrup or agave or coconut nectar (we used coconut nectar), even honey would work
- 1 chocolate bar for outside coating a few ounces worth
As your double chocolate macaroons are setting you can add a special touch to these to make a perfect little gift for someone or yourself. It’s simple to do. All you need is a little glass jar. We used a small mason jar. Some ribbon to make a bow with.
Take your double chocolate protein macaroons and put in the mason jar. Put the lid on to close and finish off with putting a bow on. And your done! Now you have yourself a cute and healthy gift ready to go!
These soft and rich coconut macaroons practically melt in your mouth. The dark chocolate coating on the outside seriously is like the icing on a cake. Makes these chocolate macaroons complete. Plus you get to lick you hands when your done dipping them in chocolate. Now if that is not a reason to make these than we don’t know what is.
