That’s A Wrap

You guys! I had such a good dinner the other night that I just have to share it with you.It tasted like something I would get at a restaurant. And it was so incredibly easy too!

I’m just glad I happened to get pictures of it. I’m no food blogger (obviously), so I don’t tend to take pictures of a lot of my meals. When I cut into this baby, though, I had to do a little photo shoot. And by photo shoot I mean a small handful of snapshots because my patience for digging in couldn’t hold out any longer.

Portabella Wrap
Serves:
1
Prep Time: 35 minutes (30 minutes marinate, 5 minutes prep)
Cook Time: 10 minutes

Ingredients:

  • 1 large portabella mushroom cap cut into large chunks
  • 1/2 small red bell pepper cut into large chunks
  • 1-2 tablespoons low fat balsamic vinaigrette (I used Trader Joes brand)
  • 2 cups fresh spinach leaves
  • 1 slice Swiss cheese
  • 1 tablespoon pesto sauce (I used Trader Joes brand)
  • 1 whole wheat wrap (I used Ole High Fiber wraps)

Step by Step:
Place the chopped portabella mushroom and red bell pepper chunks into a small Ziploc bag. Pour in 1-2 tablespoons balsamic vinaigrette dressing. Seal the bag and toss to coat the vegetables. Place in refrigerator to marinate for 30 minutes to 1 hour.

When ready to prepare dinner, bring a small nonstick pan to high heat. Sautee the mushrooms and red bell peppers for approximately 5 minutes. Once softened, add the spinach and cover the pan. While the vegetables continue to cook, spread 1 tablespoon of pesto sauce on the whole wheat wrap. Place a slice of Swiss cheese onto the wrap. Once the spinach has wilted (usually after 2-3 minutes), pour the mushroom, bell pepper, and spinach mix over the cheese. Wrap up burrito style.

Return the pan to the heat. Place the wrapped tortilla seam side down onto the pan for one minute to brown the wrap. Repeat for one more minute on the other side. Plate and serve.

Of course, this isn’t really a recipe, but since you all have shown interest in the easy, quick meals I toss together I figured this one was worth sharing. And if your family will eat mushrooms (mine, sadly, will not) then you can easily double, triple, quadruple the recipe for a family meal.

It totally looks like something I would order in a restaurant. Minus the swiss cheese though, never been a fan. (Although I do like laughing cow, which is supposedly swiss, though who knows what laughing cow actually is!)

I LOVE mushrooms. One of my favorite veggies. I’ve actually made a Bella burger really similar to that wrap before. They go so well with roasted red peppers!

Looks fantastic! I bet that little bit of pesto really adds a lot. We’re huge mushroom fans, too. Just had an egg-mushroom scramble for breakfast!

I can not stand mushrooms at all. But I LOVE wraps!! And red pepper. and cheese! So maybe I’ll just substitute something else? :)
